These Chilorio Tacos are THE BEST! Saucy, flavorful, real food perfection. It’s a typical dish from the northwest region of Mexico, particularly in the states of Sinaloa and Sonora.
My hubby said it reminds him of Chipotle's barbacoa. I kind of agree! So good.
All you need is boneless pork shoulder braised for a couple of hours then marinated with a chiles pasilla, guajillo, and ancho adobo. It's an economical dish as well as delicious!

📺 What I’m watching: Just started Nine Perfect Strangers – Season 2 (Hulu)! It’s got the same eerie, mysterious vibe as the first season and of course, Nicole Kidman is back doing her thing.
Does she ever take a break?! She’s in so many shows lately. I swear she never rests. Anyone else watching? What do you think so far?
🍽️ Latest yums: I love to cook all kinds of food (not just Mexican!) and this week I made a delicious stir fry loaded with veggies. The soy sauce base is always the same one I use for my Beef & Broccoli.
📚 What I’m loving: I’ve been reading Four Thousand Weeks and it’s really making me rethink how I spend my time. It’s not about getting more done, it’s about letting go of the pressure to do it all. If you’re into simplifying life and focusing on what truly matters, this one’s worth a read.
